Default Temperature Gauge readings

I've just gone through a bunch of fixes on my Allroad and I've gotten to the point where I'm pretty much paranoid about everything with the car. I'm practically having to take it to the shop for every 250km I drive.. But I've put too much into it at this point to just drop it for the money i would get. Anyway, I'm having some concerns with my temperature gauge (not the oil temp) as it seems to only go to either 60 or 90. I never see it in between or over 90. It also doesn't seem to have any rhyme or reason when it goes up or down. Is this common or should the temp reading be exact?
