stock boost is most definitely about .6 bar. The reason I know that is because I can't get my boost controller to change it....lol.....it sucks, especially on the 28r.

They can handle up to 20 roughly psi? My 97 a4 1.8t was hesitating under full throttle, producing 20-22 psi cause there was too much air in the cylinders. Simply not enough fuel.

So if stock is 10psi and my boost gauge is peaking at 7 could that be because of my after market FMIC? Or am I leaking boost somewhere

This is really bad idea. You're relying on reactionary fueling, where you'll run lean until the O2 sensor tells the ECU to increase fuel. Get a chip and go with that so you can run higher boost safely and with proper fuel and timing control.
