Default Audi 100 td / 1987 / questions

I have few questions related to this car. It is really good ride. Highly economical (4,8l/100km of E5!). But, I had a lot of work about it and I still have.

some data: 1986cm3, 64kW bhp, 5cyl, SOHC, turbo charger, classic diesel fuel pump (bosch), A/C, ABS, hydraulic lifters...

My recrystallized questions are:

- What is normal coolant operating temperature? Thermostat begins to open at 87C, but gauge says 96 - 103C (hard loaded).

- Why servo oil spills out from the expansion reservoir when it is cold ambient temperature, after I turn the engine on?

- What fuel should I use? Some people says that euro5 will ruin old diesel pumps because of low sulfur (no lubrication). Is this truth or myth?
