I'm trying to give my ride some wheels for christmas and foud some possibles.
I know my lug pattern is 5x112 and offset is (I think) is 38mm (am I right?)
The rims I found are 42mm offset, will they fit? How does it go with the offset - bigger=more space or opposite?

You want an offset of 35. Really.

does that mean that anything but 35mm offset does not work?

It means you either run the risk of rubbing or having a wheel that sticks out too far and makes your car look like a tractor. There's enough good used wheels out there on various forum classifieds/ebay where I wouldn't take the risk. I got my wheels on eBay for about 60% the price of new.

Final thought... check out www.tirerack.com for an explanation of offset and wheel fitment. One big consideration for your car is that you have the HP2 front calipers. They are BIG and many wheels will not fit over them. Something to watch out for.

Don't forget that it is not only the bolt pattern and the offset, but also you have to consider the shape of the spoke. There are some wheels that have too thick a spoke, or the inside edge of the spoke comes too close to the brake calipers.

Ideally, ET35 offset looks great on the 2.7T. Offset is the distance between the centerline of the wheel and the mounting surface. Audi has "negative" offset which is means the higher the number, the more "tucked-in" the centerline of the wheel is. Your stock wheels on the 2001 2.7T are 16x7 with ET45 offset or 17x7.5 with ET 43 offset if you have the BBS sport wheels.

Best bet, make sure you find a wheel that someone has already tried on a 2.7T with those calipers.

dudes, thank you so much for giving the knowledge.
The last thing to do than is to make sure the wheel is the closest possible to the wheel arch without rubbing.

While it's admittedly a personal thing, I don't think chrome belongs on a well engineered, high performance car.

yep, I actually agree completely about the chrome... Personally, I've never had chrome wheels, by choice. I just found a decent set of wheels that had a chrome lip. But the more I think about it the more I realize you're right - even the chrome lip will make it look something other than my dream car.
That's it, I'm off to look for a silver 2003 2.7T - ming blue was my 3rd color choice. After driving it for a year, you know what I realized? - There is NO SUCH THING as second or third choice. If you get anything than exactly what you want, you will always regret it.
