Can any direct me to the write up on how to change just the valve cover gaskets?

I just did mine this past weekend for the first time. I found helpful info on AudiWorld/Tech Section. Also do a search on this forum and you will find a few. The biggest snag I had was getting the spark plug wires out. Their a PITA on the 2.8. Also, getting the Valve Cover loose was tricky, you have to bang it with a soft mallet and pull up on the little tabs on the top and bottom. It took me a while, and then it popped loose and came off easy.
