Yeah, clay bars are amazing, especially if you had never used one before.

You may be able to 'improve' the look of white paint by also chemically cleaning the paint
-
To prepare paint surface to accept a wax /polymer sealant and not adversely effect there durability or optical properties will take a combination of products. Detailer’s clay will remove the surface contaminants, used in conjunction with a mildly abrasive chemical cleaner (Klasse All-In-One) to clean the micro fissures left in the surface and restore the paints gloss.

how do you know when you should retire your clay bar, and start using a fresh one?

When you can’t find a ‘clean’ (obviously a relative term) surface by kneading the clay its time to relegate it to glass surfaces, once it gets soiled from this use relegate it to wheel surfaces

They are in the business to sell clay. . .

Divide the Detailer's Clay into equal pieces and knead into a ball to ensure pliability (usually each ¼ piece will ‘clean’ two vehicles, it can then be relegated to wheel surfaces and then glass)
Take one of the pieces and flatten it out into a circle, approximately enough that it will fit into two or three fingers
Spray a 2-foot by 2-foot surface with a lubricating solution (WooliteTM or Dreftâ„¢ / Water 5:1), ensure that the surface being clayed is always wet (important enough to restate- ensure that the surface being clayed is always wet)
