I have several questions related Vag-Com.
Why adaptation channels 40-48 must be entered in determined order?

All of your questions regarding "what value is best here" can be answered easily: the current value is the 'best unless you're having problems and it needs to be calibrated differently this goes for #1, 3, & 8. I really want to give you a word of caution before playing with most of these - you can screw up things if you're not too careful, I guess it's good you're asking, however.

What is it your trying to do? Why not tell us that. You may have well just shown us a picture of a nut and said where does it go.
Some values you will not be allowed to change via vag-com some will only let you change them by a minor percentage. Seems like you are trying to do mods with the vag-com and it is really intended for diagnostics.
download a copy of Bosch uni settings it will allow you to make a few tweaks. But by the looks of it your headed the wrong way down a dark alley.

When I press a button on my dashboard I can see "Service in 15000 kilometers". But after using my car for lets say 200 kilometers the value is still the same 15000 km. I know that this value should decrease until it reaches zero right? help me to do that. I think there is nothing special here by changing date or km, I won't change other values I just want to reset "service in ....kilometers". Any help to make it working?

And this is the adaption procedure for changing the mileage.
Select 17-Instruments
Select Adaptation (10) under advanced functions
Enter Adaptation Channel Number: 42 and select "Read"
The window should read: "Minimum value mileage" and Min. Value Oil in 100 Miles
The stored value should read "50" for 5000 mile intervals
Enter "100" for 10000 mile intervals
Select "Save" and select "Yes" when VAG-COM asks "Are you SURE?"
Select 17-Instruments
Select Adaptation (10) under advanced functions
Enter Adaptation Channel Number: 42 and select "Read"
The window should read: "Minimum value mileage" and Min. Value Oil in 100 Miles
The stored value should read "50" for 5000 mile intervals
Enter "100" for 10000 mile intervals
Select "Save" and select "Yes" when VAG-COM asks "Are you SURE?"

I just remembered that you may have to change the service intervals days from 180 to 365 days. To do this follow this procedure.
Select 17-Instruments
Select Adaptation (10) under advanced functions
Enter Adaptation Channel Number: 49 and select "Read"
The window should read: "minimum time interval" and Min. Value Insp. in 1 Days
The stored value may read "180", if it does continue
Enter "365" for 365 days
Select "Save" and select "Yes" when VAG-COM asks "Are you SURE?"

Select Adaptation (10) under advanced functions
Enter Adaptation Channel Number: 49 and select "Read"
The window should read: "minimum time interval" and Min. Value Insp. in 1 Days
The stored value may read "180", if it does continue
Enter "365" for 365 days
Select "Save" and select "Yes" when VAG-COM asks "Are you SURE?"
