Just a curious question from a newbie with a decently eqipped 2007 A&, but without speech control. I found an interesting link here that talks about retrofitting speech control AND bluetooth phone prep:

However, I have the bluetooth already, and from the procedure described here, this seems to be the most complicated part of the retrofit. Does anyone know how much is involved in adding speech control to a car with a working bluetooth interface?

At least in the states you can add voice recognition with nothing more than changing some codes with a vagcom. However, you will not have the voice tag ability unless you pay for a voice module. There are several posting over on AW's C6 section where members have discussed how they did it.
