There is normally a debris shield mounted to the upright, just compare the shield you think is damaged to the other side of the car. Keep in mind though that this shield could have been damaged in several different ways; one of mine was bent a bit when a new wheel bearing was pressed in.

But if it doesn't wiggle that doesn't necessarily mean everything is okay...

True, but it's a start, no?

I suppose, and if there is wiggle from worn control arm bushings then now would be a good time to replace the control arms anyways.

Have you had an alignment since you hit the curb? If you hit a curb hard enough to break a CV joint I guarantee you broke/bent other suspension parts. Control arms, wheel bearings, sway bar links, etc.

Forgive me if this sounds harsh, but if you're a young driver and this is your first winter, I'd be more inclined to think you haven't quite mastered driving on ice yet before I'd assume there's something wrong with the car. If you're fishtailing when you drive over something slippery that means you're being too liberal with the gas. Quattro is an awesome thing, but it doesn't make you invincible.
Snaping an axle isn't the only thing that can go bad with an axle. The clicking noise in a turn is another indication of a bad axle.

No, clicking while turning is an indication of a bad CV joint. Which is exactly what I said in post #2. An axle is just an axle.

I get that clicking noise when turning at times. It's getting progressively worse. How much labor hours to replace one side CV joint assuming the job is done in a shop?
