If I remember correctly, you need to remove the bolt holding the AC lines to the pan and remove the sway bar mounts and that's it. From there you just remove the pan bolts and it comes right out.
Got my new oil pan in the mail today and am gonna put it on over the weekend. I am guessing I just need to remove the sway bar brackets and let the sway bar hang loose so that I have more room to remove the bolts on the oil pan?

You might have changed the oil pan by now. But, you're correct, you swing the sway bar down out of the way to give you a little more room to remove the oil pan. It should only be 4 nuts for the sway bar.

Just finished changing it. All went well until I went to put the sway bar back up and sheared one of the bolts that hold it up. The rest three are in place. Is the car drivable like this? Is there a quick fix?

Aren't the sway bar mounts studs that come out of the engine mount bracket? You may have to remove the bracket and press in a new stud if they are replaceable. A used bracket with studs intact may be easier. You probably don't want to drive it very far like this as every turn will be bending the remaining stud and mount.

yeah i looked it up and it looks like it is the engine mount bracket. Will I have to jack the engine up to change the bracket (or to take it out and fix it)? Any good websites for finding used audi parts?

Yea you'll have to support the motor to change that bracket. And on the V6 it can be a bit of a pain if I recall, especially the pass side.

Any local bone yard with a B5 will have that mount bracket. Shouldn't cost too much.

You could always run without a sway bar for now.
