B6: more stock hp and its sides are slabs with little lumps for fender flares and ungodly sized lowers that are unpainted (paint them! Do it!)
B5: better weight distribution and a smaller, more cramped back seat. Also, to the untrained eye a 2001 B5 looks just like a 1997 B5 so, your car looks older than it is (might be)

the decesion is really yours, the b5 will be cheaper because of age, but it will also have more miles and wear and tear
if you are lucky you can still find a b6 with a warrenty, or get a cpo car
