TT 710N DV (OEM). It's pretty much all you really "need" if you're just going to chip. It is the OEM upgrade to the 710A model DV that you most likely have. A lot of people here run this valve.

Others that come recommended are the Bailey's DV(the most popular) as well as Forge DVs.

It comes down to how much you want to spend. The 710N is ~$40 where the Bailey and Forge valves can get well over $100. Check out ecs-tuning for the 710N, they seem to have the best price. They also carry the Forge DVs. Not sure where to get the Bailey valve.

Nah, its not necessary. You'll be able to drive with your current DV for roughly a month or two before it goes. You'll be able to tell..the car will just fall on its face when you try to accelerate. Actually, I think my buddy shon has been running his GIAC with just his 710A for awhile now. The difference is that the 710A just can't handle the amount of pressure you throw at it with a chipped car. It'll work..but it will get worn out quick. Even on stock cars a 710N or better DV is a good idea. It's not gonna fry anything though..you'll be safe for awhile.

I got the 007. I think you should just get a good one because I know in my b6 it was a pain in the *** to get to and I dont want to do it another time.

Ya, that's a good point. It's really easy to get to in a B5..unless you have a certain '97 year model engine... For me the install was pretty easy and it was also the first time I'd ever worked on a car...I suppose it doesn't matter at all if you're gonna have the shop do it. Not to bash the 007 or anything..but higher pricetag doesn't mean better. If you're thinking of doing a turbo upgrade in the future then I would get a forge or a bailey but if not, the 710N will work just as well as the higher priced ones.
