which gas
Well we pay a lot more for our fuel so it should be better, but does it mean EU cars are set up differant to US cars
if our fuel is better. How well would your tuned cars perform on our fuel.

european cars r not set up n e differently. any european car should require 93. (for the 1.8t's this is essential because of the turbo.) putting higher octane gas in any european car will make it run better. if people in america put that high test gas in our cars, they would run better, but it is not essential to engine life. but for the most part, 93-95 is the highest available.
my 1.8t requires (!!!) 95 octan and runs below only in safe mode without any you can call "power"... - i also know wasted engines because of gas with a less worth of octan. in our forum everybody´s opinion is "nothing below 98 octan". the 100 octan you can get by shell, aral, bp or omv doesn´t really make your car faster but at chipped cars they need less gas on 100km than with gas with 98 octan (tested with mtm chipped tt´s!)
do u make it require 95 or does the oweners manual say that??

yes, it´s in the owners manual. but even this is not the best.... everyone from audi gives you the advice to use "super plus" (=98 octan).
the new audi 1.8t´s with the secondary air system you can get now in the tt need from the owners manual 98 octan (see sreenshot blow - taken from www.audi.de)

Europeans rate their gas differently... Over there a 95 octane is probably like our 91... their gas isn't necessarily better.
And I used to use Sunoco 94, now I use shell's best (in Ontario, anyways) which is 91 octane. I honestly don't notice a difference between the two gasses... Not any difference at all.
