I painted mine about 5 months ago and they are holding up great (no rock chips). Like Tom said make sure you use some bulldog adhesion promoter as your primer so the paint will stick.

1. What is the best thing to use to mask off the car?

2. Is PlaStick an adhesion enhancer like bulldog?

I used masking tape and newspaper, but whatever floats your boat. I don't know about the Plastick, but of all the research I did bulldog was the favorite.

How many spray cans of each do I need for just the sides and the back? From what I saw on painscratch.com, these were 12.5 oz spray cans. So I'll need clear coat, base coat, primer, and bulldog, correct?

For our silver, duplicolor's radiant silver is a perfect match. You can pick it up at any auto parts store. I used 4 of the big cans for the sides, front, and back. You will also need like 3 cans of bulldog and like 3 cans of clear cote. Bulldog is your primer, and I don't know what you mean about base cote. 3 coats of bulldog, radiant silver, and clear coat. That's it.

I got the bulldog adhesion promoter at an auto paint store. This job will take about one day. I did the sides and front one day, and the rear the next.
