I've heard some good things about copper plugs. Anybody that has them care to review?

I know you have a 30v, but many 12v guys are running delco rapidfire 9s. They're about $4 each and work great.

For a 2.8 I wouldnt bother with copper. Just get some plats or whatever will last a long time.
copper is obviously the best conductor of electricity and will disipate heat the best, so they are ideal especially for forced induction engines due to all that hot compreesed air blowing by them but they need changed pretty often. I wouldnt want to change plugs on a 2.8 every 10k-15k miles.

~ onepoint8tee GERAT sig!

Yeah plugs choice isn't that important in non-FI engines. It's the gap and frequency of replacement that's important.
