Stop driving and tow it to the audi dealer to have a sludge kit perfomred. If you have oil change reciets and the car is with the milage limitations it will be covered under warranty

You most likely have sludge. I had this problem from the owner before not changing the oil with synthetic. The dealer used a sludge kit and did it for free. All I had to do was show them that I changed the oil with syn at the correct intervals. The car's running great now.

Try using the correct oil! 10w30 might be too thick for winter time temps (even though it is pretty much a universal grade), and 10w30 was never recomended to use in the 1.8t. 5W40 is what is recomended for 2000 according to the manual. You can also use 5w30 or even 0w40 i think... When I first bought my Audi and changed the oil, i used 10w30 the first time and my oil light came on for a second-so i investigated the right oil to use (5w40 fully syn) and switched it, and havent seen the oil light since.
It does sound like you may have a sludge issue though and id stop driving it as long as the oil light is on. Get it towed to a place that can take care of it. If you have oil perfect oil change history/records, id take it to Audi because if it is sludge theyll fix it for free. If no records-take it to a place that has a "desludging" machine. Your oil pump pickup screen is probably clogged a little.
