Esp is there to protect you, leave on for daily driving. If you turn it off make sure to get the feel of the car and it limits. My BMW changes quite a bit when I turn it off, but maybe this has something to do with drive by wire and RWD

By the way, in the 05 the car cannot override any part of thesystem unless you touch the brakes. Even touching the brakes only allows the car to override a small part of the system. If I turn the system off, I can get my 4.2 to spin all 4 tires and start sliding slideways without the system turning itself on. So at least in the 05 your assertion that turning the system off makes a "zero change" is clearly wrong.
