I have a stage 3+ 2.7T A6 and need a new clutch to handle the power. Any opinions??

I was thinking Spec stage 3+??

I ran a Spec stage 5 in another car for a couple years and liked it...

Southbend SS stage 4 or 5 would be a good choice.

Clutchmasters FX400 with either the 6 or 4 puck disc. The 4 puck will be much more harsh.
