5 x 112 is the offset on the A6. You can get a lot of good wheels but everyone has their own taste. A lot of the guys here have their opinions on size also. 80 % of the will say 19's are the best fit and the other 20 would say 18's but it's up to you. Questions have been brought up about 20's but 19's are more recommended. Also, some wheels may need wheel spacers in order to clear your front calipers, since they're huge. SO be aware of everything before puurchasing a set becasue you'll be spending about a grand or more on the wheels

The bolt pattern is 5 X 112 with a 43mm offset. The early (2000, 2001) 2.7T had the very large HP2 4-pad (per wheel) calipers while most of the later (2002-2004) cars had 2-pad ATE (Girling) calipers which are also quite big. Many rims will not clear the calipers. You should find some posts like this one https://www.audiforums.com/m_509823/tm.htmif you search the forum, which will give you some ideas for rims that will fit. I have OEM 2006 A4 S-line (RS6) rims which fit great. I also like these http://www.purems.com/products/products.php/CA=1924which will fit your car. They are from Velocity Motoring...

Would stock A3 rims (5 on 112 with 56 mm offset) fit an 02 A6? Would they fit with spacers?

If I were you, I would get the S-line rims for my car. Fortunately, I already havea S-line. Btw, it will look and fit better too.
