My brother has just purchased a new Q7 sport and the Speech Dialogue System is in a different language (German, I presume!). Anyone any idea how to change it to english?

All of the displays are in English, it's just the Speechthat's german.

First place i would check is the owners manuel for the mmi. There is a seperate section in the back of the manuel that describes operation of system and may tell you how to change the language for that particular system. Otherwise youll have to go to the dealer to have the module recoded for english.
