It's not really that common to stretch 7.5 wide but it can be done. I think you'll have to go with at least 215 or lower.

My lexus is300 had 215's stock on a 17x7.5 (not even close to a stretch)..... you'll need a lot thinner tire, like a 185 or something silly like that or better yet, get some wider rims
From what I have seen with people that stretch their tires, it is because their wheels are a VERY aggressive offset, and width, and they are TOO low and that puts the wheel right at the fender (or a little beyond) and the ONLY way for them do drive is to stretch a tire on there so that it will clear the fender (which is usually rolled and pulled as well).... like a 215 tire on 8.5+ wheel. So my question to you is, are you so low and your wheels are so aggressive that you will benefit from a stretched tire, or do you hang out with people that have stretched tires and you want to take part?

i'd use a tire size calculator. 215/35/18 on 18x8 would be stretch. now take that width difference from stock 16s and compare the width difference to different tire sizes on 17s. i think you'll be able to find the right size for stretch that way without search all over the internet for somebody who's done it before lol. here's a good calculator www.tacomaworld.com/forum/tirecalc.php

215/35 can stretch alright. tire diameter will be almost an inch smaller than stock though.. it'll depend on the tire a lot also.

edit: I thought you were talking about 18x8 not 17x8. 205/40/17 should be a little stretchy..
