Double Din Kit for pre-facelift (98) B5

Doesn't really exist. Your best bet is to do a double-din conversion, which is basically retrofitting in an entire center console from a 2000-2001 A4 or 2000-2002 S4, and then you can install a double-din stereo.
Otherwise you would have to hack up your center console, relocate the AC controls to where the ashtray currently is, and build a radio cage which can accept a double-din.
This is what i did to my '98, with a Nexus 7 tablet:
Then I got a 2001 A4, which already has a double-din, and put the Nexus 7 in that:
It is MUCH easier to work with the facelift center console, IMO.

Also if I start mucking around with it, what do you use to make a custom trim surround. Like I understand you can use vinyl wrap but what do you actual wrap. Do you need to fabricate fibreglass / plastic or what do you guys use?

I think you would be better off adapting a double-din cage vs. modifying your single-din cage to accept a double-din unit. You'll want to make sure all of the mounting points are correct.
You can make a custom faceplate/bezel out of whatever material you want. Wood, fiberglass, carbon fiber, heat-molded ABS plastic, sheet metal (aluminum/steel), etc. I used 1/8" thick polycarbonate plastic to make the bezel you see in my first picture. The bezel in the 2nd picture was part of a double-din stereo kit (designed for the facelift B5).
And no matter what you will have to relocate either the HVAC controller (like I did as seen in my picture above) or relocate the buttons that go above the stereo, to fit a double-din-sized stereo. Custom modification will be no small project. This is why I suggested a facelift center console swap, as this will give you the double-din radio cage you're looking for, and it's been well documented.

Thanks for the info.
The facelift centre console swap does look more of a stock feel which is what I'm looking for but the only 'kit' I can find on the Internet at the moment is for $390! which is a little bit much I think.
