why turn on the heat when flushing

In theory turning the heat on high would slow the process of bleeding since using the heater slows the engine heating up (essentially a radiator, this is why if your car is overheating it's not a bad idea to turn on the heat).

Wow thats a lot of words to say....dude dont worry about running the heater to bleed the cooling system.
