Your A/C system is not pressurized to spec. It doesn't have enough refrigerant to handle the applied load. You may just need to refill the refrigerant, or you have a leak somewhere in your A/C system.
I had this happen to me 2 years ago and I used almost a whole can of R-134a. I got the one with the stop-leak additive just in case. Been ice cold ever since.
Try filling the system with R-134a first ($18-30). You hook the can up to the low pressure side of the compressor, pull the trigger, and stop when the pressure gauge is where it needs to be. Check the pressure specs of your car before doing it so you don't overfill! DO NOT OVERFILL!
If that doesn't work, then take it to a shop for a leak test.

First check fan operation, make sure they are working correctly. As a experienced Audi Tech, with 609 certs. and ASEs in HVAC, I DO NOT RECOMMEND any "stop leak" products. If a small leak turns into a major leak, you are going to pay the piper twice to three times as much to clean that garbage out of you HVAC system.
The ECON light will only come on once the HVAC system is near empty.
I notice with most older VAG vehicles; if the fans are working correctly, and there are no faulty in the ECU or HVAC modules for fans, pressure switches, of temp. switches, then the A/C system usually just needs a sight charge to get her back up to 100%.
