Sometimes i've noticed on my 2002 3.0 quattro that when I hold the gas pedal steady the revs will match it then drop off without me moving the pedal, and by drop off i mean like I've let off for a few seconds.

The car also surges at part throttle and feels slow to respond from lower revs.

I've never done a Throttle body alignment on it but will alignment correct issues like this? Or does it sound like the throttle body is faulty?
