Default help picking out a new audio set up

I have a old aftermarket set up from the previous owner.

it was only a really old head unit, two front 3 3/4 inch polk audio speakers and two rear kenwood speakers plugged into a old clarion amp. The head unit was made in 1997 so yeah its old lol.

I am mainly looking for really good sound quality but i'm not sure what i wanna do.

I'm gonna replace all 4 speakers, and get a head unit that I've already decided on (some $100 kenwood)

but what amp/sub?

I was thinking of getting just one 10inch or 12inch JL audio sub amp combo, I just don't know what the difference is between having 1 or 2. I listen to mainly house music
