Default Gearing

I am a new owner of a 91 AR and after driving a long way recently I realized the gearing can be taller in 5th to help out fuel economy. At 80mph I was getting about 19mpg and at 75 I get 23 or 24 mpg. Once the revs get beyond 3000 the fuel gets used a lot.
Has anyone heard of getting a taller gear put in to lower the rpms at highway speeds?
