I thought I wouldn't have this problem since I don't drive too "spirited" ... but the light came on.

Looked at the dipstick --- very very low, almost at the MIN marking. Topped off with Mobil 1 0w-40, but I accidentally put too much oil in.
The manual says to put in half a quart at a time, but when I did, it went from the middle marking to MAX or perhaps past it rather quickly.
I know you're not supposed to put too much oil in, so should i be very worried about this? Do I have to attempt to take some oil out?

You don't have to worry about it that much but just be cautious next time as too much oil may cause flooding to your vehicle. The excess oil had no where to go so it may cause your vehicle to smoke which may lead to a small fire. You don't want to have a busted head gasket for sure.

I have noticed it a break in period that the car burns oil then mellows out alot. My first 10K went thru a quart since haven't even added a drop and I'm a 1k from my 15K check

FYI check oil level everytime you fill your gas tank.(old school golden standard)
problems that you may have when oil levels are too high.
1.the crankcase gets too much oil and as the crankshaft whips around the oil foams up and you can get a drop in oil pressure therfor other parts do not get lubricated.
2.oil gets forced past seals and gasket because there is nowhere for it to go.
Next time pour 1/3 of the quart let it sit for 5 min then check your level and add as needed.

After letting it sit over night, the oil settled and is RIGHT at the MAX marking.

Close call ... lesson learned not to be so pour happy next time.
