Managed to get the answer!!!!!!
The gear **** is joined to the Gaitor and they must be removed as one so don't twist the ****. If you lift the Gaitor up and over the **** ie turn it inside out you should see that the gaitor is held in place with a metal clip. Remove this with a pair of pliers and then carefully pull the whole lot **** and Gaitor off in one piece.

Now I've got my new gaitor I figured it would be good to take some pics as I did it and build a little knowledge article for others to refer to (as who ever wants to trust the Haynes book of lies)!!!
1. Pull the base of the gaitor up as shown in the first image from the end nearest the hand brake. The two metal clips will simply move out, then carefully lift it up from the front taking care not to break the two plastic clips on the front of the gaitor as you remove it (just do it slow and you'll be fine).

2. Pull the gaitor up over the gear **** to expose the shaft of the gear stick. You will see a meal clasp which holds the plastic section of the gaitor on the gear stick shaft (shown with a red ring on the second image). I found this fiddly, but managed to pry it off with a small flat screwdriver. Once you've done this the gaitor and gear **** will lift straight off.

3. Place your replacement gear **** and gaitor over the gear stick shaft and it will click in to place (no twisting required) - BE SURE TO PUT IN ON THE CORRECT WAY ROUND, SILVER CLIPS ON THE GAITOR BASE SHOULD END UP NEAREST TO THE HAND BRAKE. You could replace the metal clasp after but I simply couldn't get it back on tight enough and instead used a cable zip tie which I found held it in perfectly.

4. Pull the gaitor over the gear **** and clip the gaitor in to the centre console in the reverse of how you removed it (black clips nearest the dash first, then push the metal clips in to place nearest the hand brake to finish).

All done from start to finish you're looking at a 10 minute job tops.
