Yes you can go 19. I had 19X8.5 in the front and 19x10 rear. The rears were a bit too large for the car but I got a great deal used on some wheels off of the shop owner who had a Benz. He slapped 225x35 in the front and 265x30 in rear. Once again, the rears were too large for my b5 and rubbed a little but I didn't know any better at the time and didn't want the rears to look funny with skimpy tires (the 225's would've looked funny with x10's cuz they weren't wide enough). SO as long as you don't go as large as I did in the rear, staggered 245 should be the limit for rears and most do 235 in the front, you should be okay. With quattro I'd recommend matching though.

Did you throw on some negitive camber in the front and a bit of toe in in the rear to compensate for ruining your cars already terrible cornering?

No, I was too new to the Audi/Eurotuning world to do something that smart. It wasn't that bad though, the Nitto tires compensated for it and it looked monstrous. The ride was actually smoother because the tires were so much wider and I was always cruising in fear of Chicago potholes ruining them. But at least I know what the extremes of the car are.
