Its pretty straight forward kemp, you just need the clutch install tool (should come with the clutch) and a really long extention to get all the bolts out at the top of the transmission.

what about the cv shafts and what not?..would this also be a good time to replace cv boots?

could i just use a 3ton jack for the trans instead of an actual trans stand?

The cv boots are really damn easy and your not taking out the cv shafts from the wheel hubs when taking out the tranny just un-bolting them from the tranny and letting them hang.
You can use a 3 ton jack just fine a big board to use on the jack so you don't damage the tranny and you have even weight distribution on the bottom of the tranny. Its really easy on the 1.8T so it really shouldn't be a problem, just take your time and try not to open the hydraulic line on the slave cylinder which is on the driver's side of the tranny, just un-bolt it and move it out of the way.

I showed some pics of me doing it on my S4 a while back but its easy.
You need to take off the upper contol arms and tie rod ends from the steering spindle, use a 17mm bolt that holds the cv shaft to the hub and you need to rent a slide hammer or gear puller to pull the cv joint off the shaft so you can replace the boot and crush washer inside.
