ok so i went back out and the coolant was down a bit more. right now there's 2.5L of g-12 and almost 2.5L of water, which is ~1.3 gal. i figure thats my capacity, but i'll check again in the morning. i really hope this solves the problem so i can move on to getting the clutch and fmic installed

You need to bleed the air out while you are filling it.
loosen the right side hose going into the heater core to expose the small hole.
Raise the expansion tank up higher than where the holes are. Fill tank until coolant comes out of the hole you exposed. Put tank back, and fill until proper level, if not correct already. This gets all the air out of the system.

I just reved my engine a lot to build pressure in the system to push the air out. Of course there is a more correct and technical way to do it, as ace said. Any small air bubbles will work their way out over time.
