Same here, I thought 1 cat. I mean, you only have one exhaust - downpipe to cat to split to resonators to mufflers to tips. I don't see any second cat fitting anywhere but what do I know.
Honestly, either you are not translating what the mechanic is saying too well or he has no idea what is wrong with the car but is willing to try on your money. I think the latter is true and I think you should drive/tow it elsewhere - to a Eurotuner:

thats what i think .. im not gonna lie i really dont know **** about audi's i had 1 alredy this is my second one .. im only 17 and no my daddy didnt pay nothing for me i work in construction dropped out shool on my freshman year and been working ever since ....... but im pretty sure theres no way in hell 2 cat will b 2g ... i told him i WANT TO PUT aftermarket cats and he said " o i dont really know how to do it cuz i never did it with aftermarkert.. but i can try" ..... so today i went there and bought my MAF which he asked and hes gonna c if he can get a used cat or if ill have to buy one

okay so today at 7:30 before i went to school i went there and told him what part cost 2g .. and he told me o your car has alot of problems i have a big list of problem and the more expensive parts are the Cat.. which i have to replace all 4 of there and they cost 1,600 ... i though audis only had 2 .. but i dunt know **** and then i told him then put aftermarket ones theyre 60 dollars... and he said i dont really know if i know how to put the aftermarket ones but im going to find and see if i can buy some used ones on the junkyard .. and i said okay cuz im not paying 1600 for a cat . and he also said that theres somethin wrong with my air central ... or central air box something like that dont really know the name guys but .. yeah i think hes bullshitting ..but it sucks cuz now 1 more week without my baby

Damn I'm good, I knew replacing the MAF sensor could help, posted my response after reading your first post... but let me know on the filter status. Clean that b*tch or buy a K&N drop in, I think this might have a lot to do with your issue.

just went over there again .. and he told me i need a Mass Air Flow Sensor .. which i just bought one form ebay lol... for 85 dollars .. he wanted to charge me 300 for a new one ..... and he told me he wants to do that first then hell see if i have to change my Cat...

The TechTonics tuning HFC is a good cat replacement: http://www.techtonicstuning.com/show...rtnum=253.167T
With an angled rear O2 sensor spacer, it doesn't throw the cat insuficiency CEL (at least it doesn't on mine) so you're OK with emissions.
