Default Passenger Airbag

I am wondering if there is an easy way, key, switch, etc.... to disable and enable the passenger side airbag. Just for when I have multiple kids in the car.

Aparently you can do it with a vag-com, though I am not sure what bank to recode. However it will not always keep the airbag from deploying in ALL instances. I would never put a kid in the front seat with an airbag unless the airbag was physically disconnected. And to do that you need a NHTSA waiver to give the mechanic. For the reason you specified - you'll never get one.

I try to avoid children in the front, but sometimes there is no way around it.
