So... I'm now a proud owner of a 98 A4 1.8 Quattro with only 49,000 miles, and I'm not regretting not buying a Honda or something along those lines. But to the question... I would like to know if the headlights off of and 01 A4 would just plug up. If not, does anyone have a good suggestions to some projector headlights that look stock (if not stock, pretty darn close). Also... are the projector head lights that much better?

No they don't. The wire harness connector is different, you'll have to splice/solder the wires, and the fender has to be trimmed. . Not difficult at all. Also I'd suggest getting ecodes (euro spec) instead of the 01 projectors, they look way better. Yes projector headlights are much better. Here a few DIY articles.
