6.0 is a reasonable "book time"

you can always find someone to do it for less... but then you can guarantee you start to sacrifice quality. When you remove the intake manifold on the 2.7 you have to make sure it gets sealed properly when putting it back in or you face vacuum leaks.

On a 2.8 the cylinder heads have "guides" for the gasket. Even a blind man can put the gasket on properly. Torque all the bolts to specs and you're good to go without any special Audi shop.
Is the 2.7 missing those guides or is a differently designed manifold?

my shop did it in 4 and did a great job. no issues. He does them all the time with no issues. They upgraded to the NEwSouth Powergaskets at the same time.

30 minutes labor, do it yourself time, for the fan and you can buy a aftermarket fan for $130. Just drop the glove box ( 5 screws) and the fan is exposed.
