I know exactly what your talking about, its somewhere in your shock/suspension parts... the TT did it with stock suspension and my jetta did it with both stock and aftermarket suspension.

I've found that the little plastic frame around the bag window (where that privacy screen mounts to) kinda rattles, particularly at higher speeds and rougher roads. If I reach back and press on it I can get it to stop, but when I let go it comes back. Any suggestions?

I read that but I'm hoping there's a better solution that either driving with one hand on the privacy hatch or completely removing it.

It is the privacy hatch for sure. I have the same problem. I haven't done anything about it yet, but I am thinking of wrapping plastic wrap around the tabs that you insert to reduce the gap and therefore stop the sound. I'll let you know how it works. It sounds dumb, but it's simple, cheap, and should be hidden from any sort of view.

I actually had a similar problem. In my suspension this rubber piece that separated two metal bars had slid out from between them and was allowing them to clank together over bumps. I had to put my car on jacks, unscrew the screws that held the two pieces close, slide the rubber piece back in, then tightened the screws back up and it fixed the problem completely. I would suggest just making sure all rubber pieces/bushings are in place. I don't know if it could be your "privacy screen" or not because I took out my a long time ago haha

I just think the car looks cleaner with the privacy screen in there... but the noise is starting to be annoying... so i just crank the radio a little more to cover it up... problem solved!!! haha

The link I posted gives instructions on how to fix the rattle in the actual hatch. The link has nothing to do with the privacy cover.
Are you sure you read it? [8D]
