Eliminating Odour inside Cabin

Eliminating Odour inside Cabin
I have the 2002 TT Roadster/convertible.
Moisture is evident on the bottom of the transverse bars of the underside of the convertible cover when the car is left out overnight in night time rain, coldness, etc.
Water always is observed on the side step sill plates when i enter the car.
The passenger side footwell is saturated.
The cabin has shocking and overpowering odour / mouldy like smell.
I cannot garage the vehicle so i cannot keep it out of weather.
What known issues exist with this topic over the years?
How do i remove this odour from inside the cabin?
What steps do i take to prevent water saturating the passenger foot well area?

We had the same problem when we bought ours. I stuck a container of "Damp Rid" under the passenger seat with the top up and windows closed. About a week, and the smell gone! We do not drive it in the winter, so it is stored in garage with damp rid inside, no smell in spring.
