Will the seats from an Audi A4 B5 Saloon/hatchback fit into A4 B5 Avant

I actually just did a seat swap from sedan to avant a few months ago. The front seats will fit no problem as long as you're swapping power for power or manual for manual. The back seats are a bit trickier. They'll fit with a little persuading, but sedans and avants use different latch mechanisms to keep the seats from flopping down when you brake hard. In the avant, there are two posts that protrude from the C pillars. These posts fit into notches in the sides of the seats. The sedan uses a hook-and-loop sort of mechanism, where there's a steel D-shaped loop on the C pillar that fits into a slot on the seat. You'll have to remove the posts from your avant to get the sedan seats to go all the way back, then source some brackets from a sedan to make the swap work.
