Engine Running Cold?
That's for removing and reinstalling the intake manifold. You should be able to do with it still in place but it will take a bit longer that it would with it removed
Nope, no mention of intake manifold here. Just one of the intake hoses (an easy one), and the engine-mounted fan. But draining the coolant appears to be necessary, and that adds more time.
I can't even figure out how I'll get my hands to fit in front of the engine so I can get the accessory belt off... it's like the engineers figured that only paper-thin people would ever work on it. I don't know how you guys manage it...

Service mode is a possible route for you. Once you know where all the bolts and clips are, it will make working on the engine a breeze. If you do that, while you're in there you can take care of other things such as degreasing the engine block, checking turbo for shaft play, look for leaks, replace vacuum hoses easily, and the list goes on.
ooh, that looks interesting. Will give me a chance to have a look at everything while I'm in there. The writeup I found on this by Googling it has all the pictures missing. Is there a better one available somewhere?

No problem, like stated before you don't "have" to do it, it's possible to get away with just removing some other things but it's definitely handy when doing other things. Good luck ! Report back with the outcome
