This is the first car I've owned that has an oil temperature gauge, so I was wondering what's considered to be normal.

This is what my car reads:

City - 200-215

Hwy - ~225 (70-80mph)

Also, I'm currently using Mobil 1 5w40. Is this cool, or maybe would you guys recommend like 15w50? Thanks.

 

200 is where the oil works its best. The numbers you have are perfectly normal. The question you should ask, whats the highest temp before the oil breaks down (burn). That idk. Theres allot of diff oil out there.
