Default Unknown upgrades

I recently traded and got a 2000 Audi TT Quattro 1.8l, and it's one of those tuner cars a kid got ahold of a few sales back and messed with real good. Looks like one of those cars from the Fast & Furious movies, but it runs a little funky.
I want to find out the details on the aftermarket ECU, but I don't know how to go about that or where to find it? Also, there is a vacuum leak somewhere and I'm not sure how to find that or deal with that?
The MAF was diagnosed to have some issues. Not quite sure how to check that out or if maybe the ECU just threw it off.
Also, when I'm cruising in 5th between 70-75mph, it reads about 2700-3000 on the tach, and I thought that might be a bit high? Although no overhearting issues, and I'm in a 100 degree + location almost every day.
I can't afford to be putting this Audi back to factory, unless anyone has suggestions on getting a cheap OEM ECU, and I can't sell it because it can't be smogged, so I have to work with what I got. The car has been doing well as far as long-ish trips go and around town, but I worry because I just don't know what could go wrong or at least what will go wrong first.
