Temp sensor
I dont know man.. If your coolant is old, or if you use non G12 coolant you can get sludge in the coolant which will corrode sludge upthe temp sensor/t statand cause false readings. Thats all i can think of at this point for ya. Good luck with it.
Spend another $6 on a new temp sensor and see what happens if you are sure your t stat is good and coolant is in fresh.
If all else fails check the wiring.

If the thermostat was stuck closed the car should overheat, if it was stuck open the car shouldn't have interior heat. I would think if the sensor was defective the code should pop up again. I don't know either and don't see why the gauge would be affected by replacing it. Maybe it is just a coincidence that the gauge went bad at the same time?
A bad temp sensor can restrict performance if thats what youre asking. If the temp sensor is bad, it basicaly reports to the ecu that the engine is not warmed up to operating temps when it actually is, and can cause you to run a little rich like how your engine runs on a cold startup..
I'll pug the old sensor bask to see if the temp gauge work again, if it, the new sensor is defective becouse the old one give me a code but the temp gauge was working fine.
