Ideal oil temperature/ Oil change

I own a 2003 Audi a6 3.0 Quattro. What is the ideal oil temperature on it? When do I change the oil? What type of oil do I use?(10w-40, 5w-30) What Brand? Where do I take my car to get an oil change? Can I take it to Jiffy Lube, Express oil, or Do I have to take it to the dealer? I bought the car few days ago. Is it wise to change oil on it? Please advise.

Is this the first car you own?
The first car you do a routine maintenance on?
One should follow the owner's manual suggestions!
If you do not have one - then get one, you'll need it(at least there is a procedure how to reset the service light and how to reprogram the key remote).

For the rest of answers you are looking => there is a plenty of info on the forum.
If you have more than one favorite brand of oil - just combine them, make your own blend.

What is an ideal oil temperature - ideal for the environment or for the oil or for..?
