the throttle response was bad, and really bad when hot, and the gears would shift too quickly to higher ones causing bad acceleration and when the turbos kicked in they were often weak, and they still said that nothing was wrong with it

I would say this is just common in turbos. I ran .5 - .7 seconds slower at the track with it being 100 outside for 5 hours. If the turbos are hot and you have no real cooling system you will feel 2-4PSI loss with in a ratio is quiet big. From stock to being chipped to stage 3 you will notice it.. just depending on how bad with the ratio of psi loss vs running psi. Nothing is wrong with your car

heat will hurt you for sure... youn could have a small boost leak somewhere that they did not detect. Chip the car and get piggies to reduce temperature behind the turbos
Do you have any codes on VAG?
As for the tranny, it defintely sucks stock... but you could try VAST tip chip to see you're happier with shifting.

GIAC chip will do the trick, itis very strong. Just maintain your car religiously and change your DVs and TBB ASAP. Make sure to always let the car warm up before pushing it, and let it cool down after a spirited drive before turning it off. Enjoy the fun!
Wammy can tell you more about stage3, but your GIAC file should be upgradable to stage3 program for a small fee IIRC.
