What is it worth?
I've got what has to be considered one the worlds nicest and heavest paper weights.
2002 A6 3.0 w/ 85,000 miles.
For the sake of this question lets assume the engine is blown.
The interior is VERY clean, the leather is in great shape, all the electronics work, the exterior looks great, wheels only have a couple minor curb scrapes. ... basically aside from not running the car looks beautiful.
Not wanting to deal with trying to part it out what could I reasonably expect to get for the car? And are there any Audi specialty scrap yards in the Southeastern U.S.?

Scrap value is about $400. Any junk yard will take it off your hands. The other option is an auction but public auction generally only handle running cars, not junk. Your best bet is an ad in CraigsList and on this forum under the For Sale section. If you get $800, consider your self lucky.
Good luck,

Parts
If you have the time, part it out yourself. There are a few Audi forum sites out there. There is always somebody who wants the headlight cover, passenger's front seat, etc.
Once you have milked that for a month or so, then sell it to a car parts place.
This of course assumes you have the tools, time and temporary storage space.
You may get a few extra hundred this way.
