I would have the fuel pressure leak down checked. By that I mean, how fast does the pressure drop after shutting the engine off. It should hold steady for quite a while. If it drops quickly it means the check valve/fuel pressure regulator in the pump has failed and all the fuel drains back to the tank. Then to start, it has to be pumped all the way back to fuel rails or high pressure pump (depending on year, and if it's MFI or direct injected) and then be pressurized enough to be injected.
If it's a sporadic thing, this may take some time. It'll need a gauge hooked up and monitored through multiple starts until the symptom occurs.
There's not really much else that can cause a long crank time besides that.
Next time it acts up, try cycling the key a couple times first before cranking again and see if it starts better.
