Default low coolant light.....wtf?

I've been getting a low coolant light for a while now, coolant is NOT low so I kinda let it go for a bit and kept an eye on things. Finally I changed the coolant bottle thinking it was the sensor in the bottle....well, nope.

Anyone got any suggestions?

Thanxxx

The thing is it only does it once in a while...some days its more frequent but others its not..cluster throwing bad codes maybe? That's why I was thinking it was electrical.
