Default Coolant Temp Sensor, Vac Leak? Any help would be great! Gauge or Sensor?

Hello Everyone, hoping someone can help or toss some advice my way.
1999 Audi A4 1.8T Quattro AEB 147,000 Auto, Tip Tronic

My temperature sensor has been acting up. Long story short, the person before me that I bought the car from pulled one of the wires from the plug of the coolant temp sensor. I replaced the plug and 4 wires to the coolant temperature plug connector. Two of the wires looked vary similar and someone had already messed with them.

The engine temp gauge, lower bottom gauge goes up to about 195-200 F and when I get on the gas and let off sometimes it will go up and down. Like say from 200F to 100F just when getting on the gas and it will go up and down rapidly. The coolant temp or top gauge on the cluster doesn't go up much or just to the first line, not even 1/3rd of the gauge. I feel like this is affecting my gas mileage etc. I have replaced the temperature plug not to long ago..?

When I run the Engine Coolant Temperature graph on Vag Com this is what I get:

On the graph and as you can see in the picture it goes up and down.. In Vcds it goes 53-56C to -40C and back and fourth rapidly? I am stumped.. Any advice would be great!

Thanks alot and have a nice day!
