Default Which Oil is best Virginia Weather

I'm located in the Richmond VA area and I'm trying to figure out what oil to use for the weather here. Should I use the 5w-40 or use a different weight? since buying the car I've done one oil change and it's time for another. back in December I used Castrol Edge with SPT SAE 5W-40. but it seems like in the mornings after letting the car warm up the oil temp hasn't risen until I've driven it a bit and up until that point the motor kicks. I was thinking of going to Amsoil but wanted to find out what others think considering the weather in VA. today its 44 degrees but the high is supposed to be 64 degrees just to reference what the weather is like. also below are two links to the amsoil that i was looking at, anyone better than the other for a daily driver that will be chipped and modded?

SAPS refers to the sulfated ash, phosphorus, and sulfur content of a motor oil. European manufacturers base their motor oil suggestions and SAPS requirements on the emission systems and/or exhaust treatment devices equipped on each application. Some emissions components are sensitive to high SAPS content, while some vehicles are equipped with emissions equipment that may not be affected by SAPS content.

honestly where i work most people do mid on all their s4/s6/s7 and r8's

you're getting a little to in depth with what oil as long as it is 5w-40 full synthetic and not " dollar store brand" oil your motor wont recieve any harm.
